Ingredients

  • 1 1/2 cups warm water
  • 1 Tbs white sugar
  • 2 teaspoons salt
  • 1 Tbs active dry yeast
  • 4-4 1/2 cups bread flour
  • 4 Tbs melted butter
  • 1/2 cup chopped sun dried tomatoes
  • 6 cheese sticks

Baking Soda Bath

  • 9 cups water
  • 2/3 cup baking soda

Egg Wash

  • 1 Large egg yolk
  • 1 Tbs water

Instructions

  1. Combine water, sugar, kosher salt, and yeast in a stand mixer. Let it sit for 5 minutes to allow the yeast to proof. Once it begins to foam, you can proceed with the next steps.
  2. Attach a hook attachment to your mixer and turn it on. Gradually add the bread flour, a little at a time, along with the melted butter.
  3. Mix on low speed until all ingredients are well combined and a dough forms.
  4. Incorporate the chopped sun dried tomatoes into the dough. Continue mixing until they are evenly distributed.
  5. Increase the mixer speed to medium and knead the dough until it pulls away cleanly from the sides of the bowl. This usually takes about 5 minutes, resulting in a smooth, elastic dough.
  6. Remove the dough from the bowl. Lightly grease the bowl with a little oil, then return the dough to the bowl. Cover it and let it rise in a warm place until it has doubled in size.
  7. While the dough is rising or once it’s done, preheat your oven to 450 degrees F (230 degrees C).
  8. Line a baking sheet with parchment paper and spray it lightly with cooking spray, or use a silicone baking mat for easy release.
  9. In a large pot, combine 9 cups of water and the baking soda. Place the pot on high heat and bring the mixture to a rolling boil.
  10. While waiting for the baking soda bath to boil, divide your risen dough into 12 equal portions. Take each portion and flatten it slightly. Split a cheese stick down the middle lengthwise, then place half a cheese stick in the center of the flattened dough. Elongate the dough around the cheese, rolling it into a log, then carefully twist it into a pretzel shape, ensuring the cheese is completely enclosed.
  11. Once the baking soda bath is boiling, carefully place each pretzel twist into the boiling water, one at a time, for exactly 30 seconds.
  12. Using a slotted spoon, remove the pretzels from the water and place them on your prepared cookie sheet, spacing them about an inch apart.
  13. In a small bowl, whisk together the large egg yolk and 1 tablespoon of water to create an egg wash. Brush this mixture generously over the top of each pretzel.
  14. Sprinkle the pretzels with a pinch of coarse salt (optional, but recommended for classic pretzel flavor). Bake for 11-15 minutes, or until they turn a beautiful golden brown color.
  15. Allow the freshly baked pretzels to cool on the baking sheet for 5-10 minutes before serving. Enjoy them warm!
