  12. Secure the Instant Pot lid, lock it into place, and set the steam release valve to “Sealing.”
  13. Set the pot to Manual (or Pressure Cook) on High Pressure. For a 6-quart pot, set to 9 minutes. For an 8-quart pot, set to 7 minutes. Remember to adjust cook time for high altitude if applicable (refer to tips above).
  14. When cooking is complete, perform a quick release of the pressure by carefully turning the valve to “Venting.”
  15. Remove ramekins from the Instant Pot and let them rest undisturbed for 3 minutes.
  16. Invert each lava cake onto a dessert plate, carefully remove the ramekin, and garnish immediately with your desired toppings. Serve warm to enjoy the true molten center!
