The Most Wonderful Time of the Year? It Might Just Be Tax Season!

While many associate “the most wonderful time of the year” with festive holiday tunes and twinkling lights, for me, tax return season truly takes the cake. It’s a period of unexpected financial relief and an opportunity to make meaningful plans for the future. Our family, being quite large, often finds ourselves receiving a healthy tax return, especially with my small business operations. This annual influx of funds has become a significant and anticipated event in our household, signaling a chance to either save, invest, or occasionally, treat ourselves to something special.

Admittedly, my family isn’t exactly renowned for our impeccable saving habits. While we thankfully operate debt-free and generally have all our essential needs met, putting money aside can be a challenge. Every time we manage to accumulate a decent sum, an irresistible travel opportunity seems to emerge, leading us to embark on wonderful family vacations. And honestly, I wouldn’t trade those precious memories for anything!

However, a few years ago, we recognized the wisdom in being more strategic with our tax return. We decided to adjust our payroll deductions to zero, ensuring a larger chunk of our earnings would be withheld throughout the year. While I know many financially prudent individuals might wince at the thought of giving the government an “interest-free loan,” this method has proven incredibly effective for us. It acts as a forced savings mechanism, allowing us to accumulate a substantial lump sum that we can then allocate thoughtfully. This approach has not only helped us save a significant portion of our return but has also inspired us to cultivate better monthly saving habits.

Maximizing Your Tax Return: Smart Spending & Delicious Rewards

Typically, we follow a simple yet effective distribution strategy for our tax return: 80% goes directly into savings, 10% is dedicated to fun activities or personal indulgences, and the remaining 10% is contributed as tithes to our church. This year, however, we’ve decided to shake things up a little. A portion of our “fun” allocation, usually reserved for travel, is being channeled into enhancing the very heart of this blog and its offerings to you, my amazing readers.

This exciting investment includes acquiring a new camera, a versatile lens, and state-of-the-art video equipment. Furthermore, a significant amount is being set aside to hire a professional video editor, ensuring the content we bring you is of the highest quality. I am incredibly enthusiastic about these new developments and the engaging content that will soon be coming your way. I truly hope you’ll appreciate the “sacrifice” of foregoing a trip this year in favor of making Eazy Peazy Mealz even better for your culinary adventures!

So, what are your plans for your tax return this year? How do you intend to make the most of the money you receive back? As you ponder your options, may I offer a suggestion that allows you to both save money in the long run and take full advantage of the improved video content I’m eager to share on the blog?

Stream Your Culinary Adventures with Walmart Family Mobile

With that little bit of extra money you might have this tax season, consider investing in smart technology and a budget-friendly mobile plan. The Samsung Galaxy Avant is an excellent choice, and pairing it with the Walmart Family Mobile plan is a fantastic way to stretch your dollars further. This plan offers incredible value: unlimited talk, text, and data (including up to 500MB of 4G LTE data) for only $29.88 per month for the first line. The robust 4G LTE service is absolutely perfect for streaming cooking videos from my blog directly into your kitchen, providing real-time guidance as you create delicious meals and desserts like these Million Dollar Bars!

We’ve personally experienced the benefits of Walmart Family Mobile. We initially set up our kids with this plan during Christmas, and it has been nothing short of fantastic – zero regrets! In fact, I recently returned to Walmart to purchase another Samsung Galaxy Avant myself. The reliable 4G LTE service makes it incredibly convenient for accessing recipes, streaming tutorials, and staying connected without breaking the bank. The upfront cost of the phone, made easier by your tax return, combined with the long-term savings and quality service of the Walmart Family Mobile plan, truly makes the switch a worthwhile decision.

Million Dollar Bars: A Truly Priceless Indulgence

While my tax return might not quite reach a million dollars, it’s certainly enough to make a significant difference in how I can serve my blog’s community this year. And as I jokingly “mope” about being a far cry short of a million, I find profound consolation in these truly super awesome “Million Dollar Bars.” These aren’t just any dessert; they are an experience. Each bar is a symphony of rich, buttery shortbread, a lusciously creamy and chewy caramel layer, and a decadent blanket of chocolate. Trust me when I say I could easily devour the entire pan!

Perhaps some of that tax return should also go towards a gym membership to balance out all this deliciousness? What do you think?

These Million Dollar Bars are truly like a homemade, and arguably superior, version of your favorite classic candy bar. Once you discover how incredibly easy they are to prepare, you’ll find it nearly impossible not to make them all the time!

Ingredients

Crust

  • 1/4 cup granulated sugar
  • 1/2 cup salted butter, softened
  • 1 1/2 cups all-purpose flour
  • 1 Tbsp milk
  • Pinch of salt

Caramel

  • 3/4 cup salted butter
  • 1/2 cup granulated sugar
  • 3 Tbsp light corn syrup
  • 14 ounce can sweetened condensed milk
  • 1 tsp vanilla extract

Chocolate Topping

  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips
  • Large crystal salt (optional, for garnish)

Instructions

  • Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius). This ensures your shortbread crust bakes evenly.
  • In a large mixing bowl, cream together the 1/2 cup of softened salted butter and 1/4 cup of granulated sugar until light and fluffy. This forms the base of your rich shortbread crust.
  • Gradually mix in the 1 1/2 cups of all-purpose flour, 1 tablespoon of milk, and a pinch of salt. Don’t be alarmed if the mixture appears very crumbly – this is the desired consistency for a perfect shortbread.
  • Prepare an 8×8 inch baking pan by lightly spraying it with non-stick spray, then lining it with parchment paper, leaving an overhang on the sides. This will make removing the bars much easier later. Press the crumbly shortbread mixture firmly and evenly into the bottom of the prepared pan.
  • Bake the shortbread crust for approximately 20 minutes, or until it’s lightly golden around the edges. Remove it from the oven and allow it to cool completely in the pan on a wire rack. Cooling is crucial before adding the caramel.
  • While the crust cools, prepare the luscious caramel layer. In a heavy-bottomed saucepan, combine 3/4 cup of salted butter, 1/2 cup of granulated sugar, 3 tablespoons of light corn syrup, 1 teaspoon of vanilla extract, and the 14-ounce can of sweetened condensed milk.
  • Heat the caramel mixture over medium heat, stirring continuously to prevent scorching. Bring it to a gentle boil, then continue stirring diligently for about 6-8 minutes, or until the caramel transforms into a beautiful golden brown color and thickens. Be careful not to overcook, or it will become too hard.
  • Once the caramel is ready, immediately pour it evenly over the top of the completely cooled shortbread crust in the baking pan. Spread it gently with a spatula if needed.
  • For the chocolate topping, place the 1/3 cup of semi-sweet chocolate chips in a microwave-safe bowl. Melt them in 30-second intervals, stirring after each, until smooth. Carefully spread this melted chocolate over the caramel layer.
  • In a separate microwave-safe bowl, melt the 1/4 cup of white chocolate chips in 30-second intervals until smooth. Drizzle the melted white chocolate over the semi-sweet chocolate, then use a small spatula or knife to gently swirl the chocolates together for an elegant marbled effect. If desired, sprinkle some large crystal salt over the top for a delightful salty-sweet contrast.
  • Allow the bars to cool completely, preferably in the refrigerator, until the chocolate is set and firm. This makes for clean cuts.
  • Once fully cooled and set, use the parchment paper overhang to lift the entire creation out of the pan. Place it on a cutting board and slice into individual bars for serving.
  • Store any leftover Million Dollar Bars in an airtight container at room temperature for up to a week, or in the refrigerator for extended freshness.

Tips for Perfect Million Dollar Bars

Crafting these indulgent Million Dollar Bars is a rewarding process, and a few key tips can ensure your success:

  • **The Shortbread Crust:** When you’re mixing the crust ingredients, you’ll notice it has a very crumbly texture. This is perfectly normal and exactly what you want! The important part is to press it down firmly and evenly into your prepared baking pan. This compression allows the butter to melt and bind the crumbs together, forming that delightful, tender shortbread base we all love. Don’t be afraid to use the bottom of a glass or your knuckles to get a really compact layer.
  • **Achieving the Ideal Caramel:** The caramel layer is the heart of these bars. Pay close attention to the cooking process. Continuous stirring is essential to prevent it from sticking to the bottom of the pan and burning. While the recipe suggests cooking until it turns a “golden brown,” you can adjust this slightly to your preference. A lighter golden caramel will be softer and chewier, while a darker, richer golden brown will yield a more intensely flavored and slightly firmer caramel, much like a traditional English toffee. Just be mindful not to over-boil it for too long, as excessive cooking can cause the sugar to crystallize and the caramel to harden too much, making it difficult to cut. Keeping the heat consistent and moderate is key.
  • **Cooling is Crucial:** Patience is a virtue, especially when making layered desserts. Ensure your shortbread crust is completely cool before pouring over the warm caramel. Similarly, let the entire pan of bars cool and set fully after adding the chocolate topping. Chilling in the refrigerator for at least an hour (or even overnight) will make for much cleaner and easier cuts, giving you beautifully defined layers.

The caramel may darken more in color than the one pictured here if you prefer a richer, more robust flavor. I achieved a lighter caramel by keeping the temperature slightly lower and stirring diligently throughout the cooking process. A darker caramel will have a deeper, more pronounced flavor profile. The key is to stir continuously and watch it closely to prevent it from burning or hardening too much.

While there are three distinct layers to these Million Dollar Bars – the shortbread, the caramel, and the chocolate – each step is surprisingly straightforward. The magic truly happens when these layers come together, creating an irresistible treat that’s greater than the sum of its parts. Once you’re finished, you’ll be rewarded with a pan of these incredible bars, each bite a perfect blend of textures and flavors. Don’t you just want to dig in and enjoy a generous portion right now? I certainly do!
