Ingredients

  • 1 cup unsalted butter room temperature
  • 1/4 cup Truvía® natural sweetener
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp lemon juice fresh is best
  • 1/4 cup Bigelow Wild Blueberry with Acai Herbal Tea freshly brewed
  • 1 Tbs lemon zest
  • 1 3/4- 2 cups all-purpose flour
  • 1/4 tsp salt

Topping

  • 8 ounces cream cheese softened
  • 1 1/2 Tbs Truvia
  • Fresh fruit

Instructions

  1. Preheat oven to 350° F.
  2. Place butter, Truvía® natural sweetener, sugar, egg, lemon juice and zest, and tea in a large mixing bowl with a paddle attachment.
  3. Cream together ingredients for 1 1/2 minutes; set aside.
  4. Blend flour and salt together in a medium bowl.
  5. Fold dry ingredient mixture into the creamed mixture.
  6. Roll dough out on a lightly floured surface to about 1 cm thickness, and cut into circles.
  7. Bake in oven for 16-18 minutes or until edges of cookies are light golden brown.
  8. Place cookie sheet on cooling rack for 20-30 minutes before removing cookies.
  9. Whip together cream cheese and Truvía®, spread over the top of the cooled cookie, and top with fresh cut fruit!
