Ingredients

Cookies

  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 2 Tbs Martinelli’s Apple Juice, Cider, or Sparkling Cider
  • A pinch of salt
  • 2 1/2 cups flour

  • 1 cup Powdered Sugar
  • 2 Tbs Martinelli’s Apple Juice or Cider or Sparkling Cider

Instructions

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a stand mixer or with a hand mixer, combine the softened butter, powdered sugar, and Martinelli’s Cider until creamy.
  • Add in the pinch of salt and mix again until well incorporated.
  • Gradually sift in the flour, mixing on low speed for a couple of minutes. The mixture will initially look like coarse sand. Continue mixing until it starts to come together and become more cohesive. Avoid overmixing.
  • Turn the dough out onto a clean surface and gently use your hands to gather and squash it together into a single ball.
  • Using a rolling pin, roll out the dough on a lightly floured surface until it is approximately 3/4 centimeters (about 1/4 to 1/3 inch) thick.
  • Use a round cookie cutter or biscuit cutter to cut out individual cookies.
  • Carefully transfer the cut cookies to a baking sheet lined with a Silicone Baking Mat or parchment paper. A pancake turner or offset spatula can help prevent them from breaking apart.
  • Bake on an ungreased baking sheet for 6 minutes. The cookies should not brown; they should remain pale with possibly very lightly golden edges.
  • Let the cookies cool on the baking pan for 1 minute before gently transferring them to a wire cooling rack to cool completely.
  • While the cookies cool, prepare the glaze: In a medium-sized bowl, whisk together the 1 cup of powdered sugar and 2 tablespoons of Martinelli’s Apple Juice/Cider until smooth and free of lumps. Adjust liquid or sugar to reach desired consistency.
