Ingredients
- 20-24 corn tortillas softened
- 7 large eggs scrambled or 32 ounces EGG BEATERS
- 1 tsp salt
- ½ tsp pepper
- 1 lb Odom’s Tennessee Pride Sausage Roll Mild browned and crumbled
- 1/2 cup tomatoes deseeded and diced or ½ cup Ro*Tel, drained
- 1 avocado halved, seeded, peeled and diced
- 1 1/2 cups shredded sharp cheddar cheese
- ⅓ cup green onion sliced
- 4 ounces Parkay Squeeze
Instructions

Brown and crumble sausage in a large skillet over medium-high heat, drain any excess grease off the sausage, and set aside.

Scramble eggs, seasoning them with the salt and pepper. Or use 32 ounce carton EGG BEATERS, and season with salt and pepper. Scramble by cooking in a skillet over medium heat until done. Set aside

De-seed and finely chop tomatoes or drain ½ cup of Ro*Tel, dice avocado, and set aside.

Slice the green onion into rounds, and set aside.

Soften corn tortillas by placing them between a dampened paper towel and microwaving for 15 seconds. Cover and set aside.

Working one at a time, transfer a warmed and softened tortilla to a work surface.

Place a scoop of eggs, Odom’s Tennessee Pride Sausage, tomatoes, avocado, green onion, and cheddar cheese in the center of each wrapper. Bring the bottom edge of the tortilla tightly over the filling, rolling from bottom to top until the top of the tortilla is reached. Repeat with remaining tortilla and filling.

In a large skillet, over medium heat, heat the Parkay Squeeze, until it sizzles

Place taquitos seam side down onto hot skillet, and fry them in the Parkay Squeeze.
Freeze, Eat, or Bake

If Freezing, remove from fry pan, and place on a cookie sheet, and freeze for 1-2 hours, then place in zip top freezer bag and freeze until ready to use.

If Eating Immediately, fry on all sides until desired crunchiness is achieved and cheese is melted.

If baking, or preparing for a large crowd, Preheat oven to 425 degrees F. Line a baking sheet with parchment paper; set aside. After frying them seam side down, remove from skillet and place on a prepared baking sheet, bake 10-12 minutes until taquitos are crispy and cheese is melted. .

Serve immediately.
