Hello, food enthusiasts! Kim here, from Berly’s Kitchen. As the holiday season approaches, the excitement for festive gatherings and delicious food builds. Deciding on the perfect menu can be a delightful challenge, with so many cherished recipes to choose from. While classic dishes like succulent turkey or roasted chicken, comforting green bean casserole, candied sweet potatoes, and, of course, a slice of heavenly pie are staples, we always look for ways to enhance our holiday spread.
Mashed potatoes, a beloved cornerstone of any festive meal, often steal the show. They are the ultimate comfort food, providing a creamy, hearty base for all the rich gravies and savory main courses. But why settle for ordinary when you can create something extraordinary? This year, we’re taking our mashed potato game to an entirely new level with a recipe that promises to impress even the most discerning palates: Roasted Garlic Bleu Cheese Mashed Potatoes.

The Evolution of a Holiday Classic: Beyond Traditional Mashed Potatoes
Mashed potatoes are more than just a side dish; they are a canvas for culinary creativity. While the traditional creamy version, made with generous amounts of heavy cream and butter, holds a special place in our hearts, experimenting with flavors can turn a simple staple into a memorable culinary experience. In previous years, we’ve explored variations like aromatic rosemary and Parmesan potatoes, or the profoundly satisfying garlic mashed potatoes. Each variation brought its own unique charm, but this year’s creation, the roasted garlic bleu cheese mashed potatoes, truly redefines holiday indulgence.
Why Roasted Garlic Bleu Cheese Mashed Potatoes Will Be Your New Favorite
If you’ve never experienced the sublime combination of roasted garlic and pungent bleu cheese folded into fluffy mashed potatoes, prepare for a revelation. The magic of this dish lies in its sophisticated flavor profile. Roasting garlic transforms its sharp, raw bite into a sweet, mellow, and deeply aromatic essence. This caramelized garlic blends seamlessly with the rich butter and creamy milk, adding incredible depth without overwhelming the palate. It’s a fundamental step that distinguishes this recipe from any other garlic mashed potato dish.
Then comes the star of the show: bleu cheese. Its distinctive tangy, salty, and slightly pungent notes elevate the potatoes from a humble side to an elegant, gourmet offering. When gently folded into the warm potatoes, the bleu cheese softens and imparts a luxurious creaminess and a bold flavor that complements the roasted garlic beautifully. The result is a harmonious symphony of flavors that will have your guests reaching for seconds, possibly even thirds! This isn’t just a side dish; it’s a statement.

Essential Tips for Perfect Roasted Garlic Bleu Cheese Mashed Potatoes
Achieving perfectly creamy and flavorful roasted garlic bleu cheese mashed potatoes is simpler than you might think, especially with a few expert tips. Follow these guidelines to ensure your holiday side dish is nothing short of spectacular:
- Choosing the Right Potatoes: For the best mashed potatoes, opt for starchy varieties like Russet or Idaho. Their high starch content makes them fluffy and absorbent, perfect for soaking up all the delicious flavors. Yukon Gold potatoes are also an excellent choice, offering a naturally buttery texture and golden hue.
- To Peel or Not to Peel: While many prefer the silky smooth texture of peeled potatoes, leaving the skins on can add a rustic charm and extra fiber. The choice is yours, but for truly smooth mashed potatoes, peeling is recommended.
- Cook Until Fork Tender: The key to lump-free, creamy mashed potatoes is ensuring they are cooked thoroughly. Boil your diced potatoes until they are easily pierced with a fork. Overcooked potatoes can become waterlogged, while undercooked ones will result in a lumpy, unpleasant texture.
- Embrace Roasted Garlic: This is non-negotiable! Using raw garlic will result in a sharp, bitter, and overwhelming flavor. Roasting transforms garlic into a sweet, caramelized, and mellow ingredient that perfectly harmonizes with the other components. It’s worth the extra step for an unparalleled depth of flavor.
- Add Butter While Hot: Incorporate the diced unsalted butter into the freshly drained, hot potatoes. The residual heat will melt the butter beautifully, infusing the potatoes with richness and creating a luscious texture before mashing.
- Strategic Bleu Cheese Addition: Bleu cheese is wonderfully potent, so a little goes a long way. Start with the recommended amount and taste as you go. You can always add more if you desire a stronger flavor, but it’s hard to reduce if you’ve added too much. Aim for a balanced flavor where the bleu cheese enhances rather than dominates.
- Mashing Tools Matter: Your desired texture dictates your tool. For a slightly rustic mash with a few delightful lumps, a potato masher is ideal. If you crave an ultra-smooth, velvety consistency, an electric mixer or a potato ricer will achieve that. When using an electric mixer, add a tablespoon of warm milk or cream at a time until you reach your desired creaminess, being careful not to overmix, which can make potatoes gluey.
- Warm Milk/Cream: Always warm your milk or cream before adding it to the potatoes. Cold dairy can cool down the potatoes, affecting the texture and melting of the butter. Warm milk helps everything combine smoothly for a truly creamy result.
- Season Generously: Don’t forget salt and freshly ground black pepper! Potatoes require a good amount of seasoning to truly shine. Taste and adjust as needed, remembering that the bleu cheese also contributes to the saltiness.

Roasted Garlic Bleu Cheese Mashed Potatoes
Roasted Garlic Bleu Cheese Mashed Potatoes are the perfect side dish for any holiday table. Traditional mashed potatoes are no match for these easy to prepare family favorite.
Ingredients
- 1 medium bulb of garlic (roasted)
- 1 tsp. olive oil
- 2 lbs. Idaho potatoes
- 4 Tbsp. unsalted butter (diced)
- 1/2 cup whole milk (warmed)
- 4 oz. crumbled bleu cheese
- Salt & pepper to taste
Instructions
Roast the Garlic
- Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Carefully cut the top off the garlic bulb to expose the cloves, then drizzle with olive oil.
- Wrap the garlic bulb in foil and bake for 30 minutes, or until the cloves are soft and golden brown.
- Remove from the oven, let cool slightly, then carefully squeeze the sweet, roasted garlic cloves out of the bulb. Set aside.
Prepare the Potatoes
- While the garlic roasts, wash, skin (if desired), and dice the Idaho potatoes into 1 to 1 1/2 inch cubes. Place them into a large stock pot.
- Add enough water to the pot to cover the potatoes by two inches. Cover with a lid.
- Bring the water to a boil, then reduce heat to a simmer and cook for approximately 20 minutes, or until the potatoes are completely fork tender.
- Drain the water thoroughly and transfer the cooked potatoes into a large, heat-safe mixing bowl.
- Immediately add the squeezed roasted garlic cloves, diced unsalted butter, and warmed whole milk to the hot potatoes.
- Use a potato masher or a hand blender to combine the ingredients until you reach your desired consistency. Be careful not to overmix, especially with a blender, to avoid a gummy texture.
- Gently fold in the crumbled bleu cheese. Taste and season with salt and freshly ground black pepper to your preference.
- Transfer to a serving dish, garnish with additional bleu cheese crumbles or fresh chives if desired, and serve immediately.
Notes
Bleu cheese is a strong and distinctive cheese. It’s always best to start with a little less and add more as desired. Taste the mashed potatoes after the initial addition of bleu cheese to ensure the flavor is perfectly balanced to your liking.
